Sticky Chicken
12 boneless skinless chicken breast
2-3 eggs scrambled
cornstarch
garlic salt
2 T soy sauce
6 T catsup
1 1/4 c sugar
1 tsp salt
1/2 c pineapple juice
1 T red wine vinegar
Preheat oven to 350. Dip chicken in eggs. Coat each piece in cornstarch. Brown chicken and place on foil lined baking dish. Sprinkle with garlic salt while still hot. Mix remaining ingredients to make sauce. Pour sauce over chicken and bake for 30-40 min.
Raspberry Coconut Bars--SUPER EASY--Katie even helped make these
3/4 c butter
2 c sweetened coconut (divided)
3/4 c brown sugar
1 1/2 c old fashioned oatmeal
1/4 c sugar
3/4 c raspberry Preserve
1 c flour
Preheat oven to 375. Beat butter and sugars together until fluffy. Add flour, 1 c coconut and oatmeal; mix. set aside 1 c of mixture. Press remaining mixture evenly over bottom of 9x13 pan. spread raspberry preserve over mixture (I actually didn't measure the raspberry. I just put as much on as I wanted...till it looked good :) ) crumble 1 c mixture you saved over preserves. sprinkle with 1 c coconut. Bake for 25 min. Allow to cool completely before cutting.
